Chocolate Orange Cupcakes

So, tomorrow turned into Sunday and muffins turned into cupcakes. It happens.

This is one of my favorite recipes. I made them with my Kitchenaid mixer and my toaster oven. They are amazing! Yes, I ate 2 right out of the oven.


Vegan Chocolate Orange Cupcakes

1 1/2 Cups All Purpose Flour
1/2 Cup Unsweetened Cocoa Powder
1 Cup Raw Sugar (I used Sugar in the Raw Turbinado)
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/4 Tsp Salt
1 Cup Orange Juice
1/2 Cup Olive Oil
1 Tsp Pure Vanilla Extract
1 Tsp Orange Zest or Orange Peel

Preheat oven to 350 degrees. Mix all ingredients until fully combined. Fill each cupcake liner about 3/4 of the way. Bake for 18 to 20 minutes - until a toothpick comes out clean. Cool on a wire rack.

The Vegan Chef

About 2 weeks ago I started a journey to lean into becoming vegan. Part of the problem is that I love to bake. It's one of my favorite things. So I guess I have a huge challenge of reinventing all of my favorite recipes. Join me for the journey?

Another challenge for me is that I am currently in college. That means living in a four bedroom apartment with 3 roommates, none of which clean the kitchen which is half of why I don't like any of them. The other reason is that the only time I am aware that other people live here is when they decide to cook and talk on the phone (loudly) at about midnight. Always on weeknights. Ugh!

So, for this adventure I am armed with a mini fridge, a Kitchenaid mixer, a small toaster oven, and the bathroom sink. Crude tools, but surely we can make this work. Tomorrow's task - Blueberry muffins. I need a superfood for my diet and something to eat for breakfast in the mornings.
